For copper, go to Durotar, there's a crater-like area near Orgrimmar, southwest of the city itself, I can't remember the area's name.
For Iron, go to the Thousand Needles, in Highperch.
For silver, go to Ashenvale, there's more scattered there.
For gold and mithril, go to Tanaris and Un'Goro, there's some spread throughout the two areas.
For thorium, go to Un'Goro, there's tons of it there, especially at the center of the territory itself, Fire Plume Ridge.
For truesilver, go to the hive cave in Un'Goro, there's some there. There's also a little around the Horde's camp in Silithus.
For fel iron, go to Hellfire Peninsula, there's a lot of it scattered throughout the whole territory.

I'll keep an update on where to mine other types of ores as I level and search more.
